What is SHU?
The Scoville Heat Unit (SHU) is a measurement scale used to quantify the spiciness or pungency of chili peppers and other spicy foods, named after American pharmacist Wilbur Scoville who developed the original organoleptic test in 1912. The scale measures the concentration of capsaicin, the chemical compound responsible for the burning sensation experienced when consuming chilies. In India, which is the world's largest producer, consumer, and exporter of chilies, the SHU scale plays a crucial role in agriculture, the food processing industry, and culinary research. Indian chili varieties are routinely classified using this scale, with popular Guntur chilies measuring around 30,000 to 50,000 SHU, while the famous Bhut Jolokia (Ghost Pepper) from Assam records an intense heat of over one million SHU. The SHU measurement is widely used by spice traders, food scientists, and quality control agencies across India to grade and price chili products in both domestic and international export markets.
